CORKBAR AND ARTISANAL PORK PURVEYOR THE CAST IRON GOURMET ANNOUNCE THE “SWINE & WINE” DINNER, TAKING PLACE AT CORKBAR FEBRUARY 2, 2011

Downtown Los Angeles’s California-centric wine bar and Executive Chef Albert Aviles team up with bacon aficionado Rashida Purifoy to offer diners a $25, three-course bacon tasting menu

WHAT:

Wednesday, February 2, 2011 Corkbar, known for its California-focused wine list and farmers’ market-inspired cuisine, joins forces with artisanal bacon purveyor the Cast Iron Gourmet to feature a $25, three-course bacon tasting menu from 5-10 p.m. A collaboration between Corkbar Executive Chef Albert Aviles and the Cast Iron Gourmet Chef/Owner Rashida Purifoy, featured items will include Frisée and Bacon Salad with Roasted Tomato, Shallot, Bacon Lardons, and Grain Mustard Vinaigrette; Báhn Mi Sliders, made with Cured Pork Belly, Hoisin Glaze, Sambal Aïoli, Micro Cilantro, and Pickled Daikon and Carrot, served on a Brioche Bun with a side of Sriracha Sauce; and a Bacon Chocolate Cupcake with Caramel Whipped Cream and Bacon Lardons. An optional wine pairing is available for $13, and includes a 2009 Melville Viognier, Santa Ynez Valley; a 2006, Holus Bolus Syrah, Santa Barbara County; and a 2008 Justin "Obtuse" Port, Paso Robles. A limited number of reservations will be accepted for this event.

“The idea for the ‘Swine & Wine’ menu came about after Rashida came into Corkbar for dinner,” Aviles says. “We both share a mutual admiration for all things bacon and next thing we knew, plans were in the works for a bacon-centric tasting menu here at the wine bar.”

Corkbar is also offering guests a chance to win two complimentary “Swine & Wine” dinners by becoming a Corkbar Twitter follower and tweeting @Corkbar the name of their favorite bacon dish—anything from an at-home recipe to a favorite restaurant dish—between 12 a.m. PT on January 13 and 11:59 p.m. on January 31, 2011 (existing Twitter followers are eligible, though they must still tweet within the aforementioned timeframe). ABOUT THE CAST IRON GOURMET:
A Los Angeles-based company and pop-up bacon vendor, the Cast Iron Gourmet specializes in making small-batch bacon and bacon-inspired goodies: Small batch because most of the Cast Iron Gourmet’s serving sizes are perfect for one or two people; bacon because it is decidedly delicious. The Cast Iron Gourmet’s process is simple. First, they take fresh, sustainable pork belly, and cure it for days. Next, they take one of their hand-crafted rubs—each of them made with a unique blend of spices—and coat the pork with its sinfully good flavor. Finally, they smoke the meat using fresh hickory wood, which helps give the Cast Iron Gourmet’s bacon a delectable, just-off-the-grill flavor. Consider the Cast Iron Gourmet your personal bacontopia. After all, good things come in small batches. Find the Cast Iron Gourmet online at www.castirongourmetla.com, on Facebook, or follow the company on Twitter.
